pumpkin muffins

During this time of year we start seeing everything pumpkin coming out in the stores. This is a sign that Fall is just around the corner. You will see anything from coffee creamer, cereal, and many more items that have pumpkin flavorings added as an  ingredient. 

While commonly viewed as a vegetable, pumpkin is scientifically a fruit, as it contains seeds. That said, it is nutritionally more similar to vegetables than fruits. Pumpkin is a healthy source of vitamin A, vitamin C and vitamin E. It also contains antioxidants that can lower the risk of some types of cancer, and also contains a variety of nutrients that can improve your heart health.

I am going to share a simple two-ingredient pumpkin muffin recipe that even our younger chefs can make in the oven. All you will need is one can of pumpkin puree and a spice cake mix. If you can not find a spice cake mix you can use a yellow cake mix and add 2 teaspoons of pumpkin spice to the cake mix. You will not follow the directions on the cake mix. Just combine the dry cake mix and the pumpkin puree evenly in a bowl. Preheat the oven to 325 degrees, scoop mixture into lined or well-sprayed muffin tins and bake for 18-20 minutes or until toothpick inserted and comes out clean. They may not come out pretty or smooth like a regular muffin but they are very tasty.

Ingredients :

I spice cake mix

1 can pumpkin puree

Directions:

Preheat the oven to 325 degrees.

Mix spice cake mix together with pumpkin. Scoop into lined or well-sprayed muffins.

Bake 18-20 minutes (until toothpick comes out clean)

I hope you get those little chefs in the kitchen and do some baking with you. It is a great way to introduce them to the world of baking and create special memories.
