Our furbabies are part of the family! They are there for us when we’re happy, sad, lonely or need someone to talk to. They keep us smiling and happy. They even keep us moving taking them for walks and playing outside. And what is one thing that makes those babies happy that we’ve been told isn’t a great idea? Feeding them “people food.”  The food we eat often has ingredients that can be harmful to our pets, but those sad eyes asking for a bite are sometimes too much to ignore. So, why not make a dish that is delicious and healthful for both pets and humans? Just keep in mind, this should only be done on occasion as a special treat. Enjoy!

Cheesy Sweet Potato & Black Bean Bake

Ingredients:

  • •  1 tsp. vegetable oil
  • •  1 1⁄2 C instant brown rice, cooked
  • •  1 (14.5 oz) can black beans, rinsed
  • •  2 (14.5 oz) cans diced tomatoes, no garlic or onion seasoning
  • •  2 C sweet potato, peeled and diced in 1⁄4 inch pieces
  • •  2 C cheese, shredded (cheddar, mozzarella, Italian blend, etc.)

Directions:

  1. Preheat oven to 400oF and lightly coat a 13×9 inch baking dish with oil
  2. Combine rice, beans, tomatoes, sweet potatoes, and 1 C of cheese and spread evenly into the pan
  3. Cover with foil, bake for 45 min or until the potatoes are tender
  4. Sprinkle remaining cheese on top and bake, uncovered another 5 min until cheese is lightly browned.

For Humans: Cool slightly and cut into 6 (4×4 inch) squares for serving

For Dogs: Cool at least 10 minutes and serve using the chart below

Where are the onions??

  • Onions are a common casserole ingredient that can be harmful to dogs so they are not included in this recipe. If you love onions, you can cook some separately and add them to your plate!
